Just in case it doesn't, I took the time to type it up for you so you will READ IT.
When you hit File > New and it asks for image size, go down past image size until you see "mode." If all the colours are grey as you said they are, then that space should say "Greyscale" Click the arrow and find the colour mode you want. (I'm guessing you'll probably want "RGB Colour.")
I have Photoshop 5.0 (OLD) so yours might be a bit different, I don't know, but I don't know why you wouldn't be able to find it from there. C:
